Ever since I’ve been working at the Grand Hyatt, I’ve received numerous requests to prepare alkaline recipes for our holistic, go-green customers. So here are three alkaline recipes that I would like to share with you…
And that’s when I woke from up this ‘cuisinier extraordinaire’ fantasy of mine, like a splash of cold water to this self-loathing reality that I seem can’t get enough of. But truth be told, the only experience I have with preparing cuisine is barely managing to dice and slice fresh veggies into amoeba-like shapes, and attacking the home-made preparations by Mom. And my contribution to the effort is just as significant as preparing gruel for Oliver Twist.
Fortunately, there are some people (thanks to the Internet) who seem to have a firm grasp on preparing healthy alkaline recipes along with the relevant qualifications and work experience to pull it off as a chef, unlike yours truly.
Now that I’m done with the self-deprecating humor that follows total public humiliation, let’s get down to business! So, the three recipes discussed today will include a beverage, and preparations for breakfast and lunch. Now, my reasons for sharing these recipes for these particular meals are because they are the most important meals of the day.
Breakfast
Recipe: Banana Pancakes
Ingredients: 1 banana, 2 tablespoons coconut meal or dried coconut, cinnamon
Directions: Mash the banana with a fork in a bowl until very smooth. Add the coconut meal and some cinnamon to taste. Mix well. Flatten the banana/coconut dough and make small pancakes of them. Leaf out in direct sunlight for about 1 hour, flip over and leaf for another hour. You may also use the dehydrator or oven. But then it will take longer to dry them. They don't have to be dry, just on the outsides.
Tip
If you make them the night before, you can take them to go for breakfast in the morning.
Lunch
Recipe: Sprouted Bagel with Cold Smoked Salmon
Ingredients: Sprouted Bagel (i.e. Alvarado), Cold Smoked Salmon, Lettuce Leaf, Tomato Slice, Onions cut into rings
Directions: Take a Bagel out of the freezer and put in the toaster. Spread with some raw coconut oil if you like. Put the lettuce leaf first. Then add one or more slices of smoked salmon and top with the tomato slice and onion rings. You may also add capers if you like.
Beverage
Recipe: Green Drink
Ingredients: Apple juice, pineapple juice or pure water, any green and fresh (uncooked) vegetables.
Directions: Pour two cups of apple juice, pineapple juice or clean water (distilled or reverse-osmosis and carbon filtered) into a Vita-Mixer (or, blender, if you don't have a Vita-Mixer). To this add one to two cups of any green and fresh (uncooked) vegetables.
Suggestions: carrot tops, parsley, broccoli, celery, lettuce (not iceberg) comfrey leaves, mint leaves, dandelion greens, zucchini-peel.
Start Vita-Mixer or blender and run long enough on high speed to liquefy the vegetables for 5 to 10 seconds in Vita-Mixer or 2 to 5 minutes in a blender.
Strain and drink the liquid.
