Hunter: I've been eating much better than I used to, now that I'm taking a journal of my caloric intake. I've also been exercising better. Is HIIT (High Intensity Interval Training) undoubtedly the best fat loss cardio workout that I could do?

First, congrats on taking control of your eating habits. Food journals are a great wake-up call to show you exactly how out of control your diet may be. After a few weeks of recording your calories, you will likely develop much better habits naturally and won't even need the journal anymore.
Now, for a straight-to-the-point answer to your question: From personal experience, yes, HIIT (High Intensity Interval Training) is undoubtedly the best fat loss cardio workout I've ever used.
That being said, of course, I must issue the "one size doesn't fit all" disclaimer. First, you may not want to go from lifelong couch potato to an extreme HIIT routine right away. So, if you're just starting to get into shape, or back into shape, I'd start with the basics of walking/jogging to prep your body.
If you're already doing regular cardio and looking for a way to ignite faster fat loss, then I would absolutely recommend at least giving HIIT a shot. There is growing research and evidence that it works for a majority of individuals and provides fat-burning effects for up to 38 hours after you're done!

I would add that yes HIIT is one of the best fat burn workouts but you need to be certain you are healthy before starting a high intensity or more hard core hit schedule
